Great Mashed Taters

2 lbs of yukon gold or baking potatoes, peeled and quartered

2/3 cup milk

3 T butter

1/2 tsp salt (substitute garlic salt for a different flavor)

1/4 tsp ground pepper

Put potatoes in large saucepan with water to cover. Bring to a boil and simmer for 15 to 20 minutes, until potatoes fall off fork when poked. Drain in colander.  Return hot potatoes (cold potatoes don’t mash, they stick together like glue) to pan and mash with handheld mixer or masher until smooth. Gradually mix in remaining ingredients.

Mix in some cheddar cheese and sliced scallions. OR mix in wasabi paste.

Serve warm.
